Gaby's Bakery - Classic Banana Loaf

And the award for the dullest, most boring looking cake goes to…………But don’t be mistaken, this understated little number is absolutely delicious and disappears in a flash every time. Plus, the big bonus is that the instructions cover all of three sentences. Why slave over a hot oven if you don’t have to!

Classic Banana Loaf

Ingredients:
3 overripe bananas
110gms unsalted butter (room temperature)
130gms light brown sugar
170gms plain flour
2 eggs
2 tsp baking powder
1tsp vanilla essence (optional)
½ tsp ground cinnamon (optional)

Method:
Preheat oven to 170⁰C. Line and grease a 2lb loaf tin. Beat butter and sugar together until light and fluffy, then add eggs one at a time, beating in between. Mash and beat the bananas, then add the baking powder and any optional extras.

Lastly add the flour, beating only until it’s mixed in, (don’t over beat). Bake for 40-45 mins until golden on top and a skewer inserted into the centre comes out clean.
